Heaven and Hell
![]() Pure Heaven. |
A thought occurred to me today as I made breakfast for myself and the wife.
Every morning in heaven, you are served hot, sunny-side-up fried eggs cooked in fresh bacon fat. Runny yolks, buttered toast, perfectly seasoned.
Every morning in hell you get cold scrambled eggs cooked in butter.

Hey Chef Matt,
What should you cook scrambled eggs in besides butter and why?

Hi Matt! I just found you! I love the blog!
I am also a web designer/programmer and can’t shake this passion for food!
I need to dig a bit more in your site, but in the meantime I wanted to say thanks for inspiring me today! :~)
Oh and I love this post!
Although I’m an omelet girl, myself. ;~P

Donna - Breakfast eggs should be cooked in animal fat. It is just simple as that. While admittedly butter’s fat does come from an animal, I’m talking about the rendered fat from cooking something like bacon or sausage. The fond that is laid down and rich flavors are just unbeatable when making fried eggs or scrambled eggs or even omelets. (Though I often do omelets in butter if only for tradition…)
Roni - I am always amazed when people say I am inspirational. I like to think of my life as more of a cautionary tale than an inspiration…
